Or, When I build a Guillemot L, I installed the external stems before I stripped the deck. I extended the ext stem about an inch above the shear line. I then clamped by shear strip to the forms and hull pass the external stem and marked the cutoff line. I installed the port and starboard shear strips 3/8 inch pass the external stem. I also left the external stem and 1/8 inch wider than the form at the shear line area.. After I completed the deck. I planed and sand the external stems and deck strips to their final shape. ( I didn't want to see the external stem if you looked down on the kayak.) I used several layers of fiberglass on the noses of the bow and stern.)
