I'd definitely wipe with a damp rag or sponge as you go. It's tough to sand when it's dry because it softens with heat and clogs sandpaper, and is prone to pulling up wood when you scrape it because the bond strength between the wood and the cedar exceeds the sheer strength of the wood.
