The CF I've been using is very 'slippery' when dry, so the fabric likes to unravel. It needs to be handled gently.
Other than that, it's easy stuff to work with; it loves epoxy and wets out easily.

Be careful about spearing yourself on threads of CF with cured epoxy.

You could try using peel ply under the deck to help keep the glass/CF from sagging- I did on my last coaming and it seemed to help a bit.
Another quick and dirty trick is to just use some pieces of wax paper under the deck instead of peel ply - it helps to flatten things out a bit.
If you 'keep an eye on' the glass as it's setting up you can sometimes 'massage' the partly cured stuff back into place if necessary.
A good light and perhaps a mirror can help.
