The selvage edge on tape has always caused a ridge for me.
For wrapping an edge, I'd use bias-cut cloth. One nice thing about bias cutting is that it give you a longer strip of glass.

I've started using the 'masking tape under the glass to get a clean edge line'- method (which I found here - from Nick?) and it works pretty well. You need to get it at just the right amount of cure. Wetting the utility knife blade with a bit of alcohol or acetone helps me to keep the blade from sticking and tugging out threads when cutting.
A carbide scraper (my new 'fave tool') works well to shave the edge, and saves some sanding. You'll probably need quite a bit of epoxy over the glass to get back to a 'flat' surface.

A general comment on tape: Check your tape for wet-out before you use it! I recently bought some glass tape that is very hard to wet out - it wet eventually, but luckily the boat was a painted boat project, so clarity wasn't an issue.
