Hey Andrew-

All paint is glossy. There's no other way to make it. To obtain the different sheens, silica and other additives go into glossy paint. Same with lacquer and varnish If you go to a quality paint shop they will sell you just the additive to make the sheen what you want. (In your area you can probably get it at Painter's Supply- they have several locations http://www.painters-supply.com/store-locator/ . You might also try looking for a Sherwin Williams industrial coatings store- not the consumer paint stores)

Alternatively, I have known a few people who paint with glossy oil-based paint, then as a final coat add a layer of matte Coelan on top. It's expensive stuff, but it's also awesome.

Most professional woodworkers who use lacquer (I have done this frequently) generally use gloss and control the sheen with abrasives like steel wool or scotchbrite pads, and you can do that with oil-based paint, but you have to wait a LONG time before you try or you'll make a mess. I'm talking 2-3 months.
