I vote for leaving off the glass, none of my boats are glassed. Sure it adds strength but the ply is for most purposes strong enough already - even 3 mm. Just glass over the fillets. Please don’t trust your daughter’s life to door skin, use the good stuff.
A shorter boat gets less abuse and a lighter boat can be handled more gently out of the water. Abuse afloat depends on the location and application.
You can save some weight with a canoe, application permitting, and it's easier to get in and out in the shallows if the beach is rocky. My 11' x 26" gunkholing canoe weighed in at 15 lb unfinished and less seat; launch weight will be well under 20 lb. It was built from a single 3 mm ply sheet with chine logs, no glass at all, yet it's designed for my 200 lb weight and it won’t need to be treated with kid gloves.
