I've done as many as 15 coats on a project, but that was a MUCH bigger boat and that varnish job took 3 months.

You only need one coat, if it's perfect, if it's not, then wet sand (never dry sand varnish) and try again.

Do not start varnishing until the epoxy is perfect, more epoxy fixes the surface a heck of alot faster than trying to do it with varnish.
