A few thoughts:
Increased wetted surface is not a good thing 'in all conditions', as Epic states. We're not all equipped with the 'engine room' that Oscar and Greg have.

Epic compares kayak shapes to sailboats, which is an area where I have some experience. Spend some time slamming to windward in a plumb-bowed sailboat and you will learn to appreciate the value of overhangs, and the meaning of 'sea-kindly'. "Modern' sailboats are notorious for breaking in rough weather, and causing crew injuries belowdecks. Remember that those plumb bows also produce 'slabby', flat sides all the way to the ends of the boat, in most designs.

That said, it's possible to have overhangs with the 'wrong' amount of buoyancy, so you can't 'judge a book by the cover'.

Greenland boats were designed for hunting, not rough-water cruising. When there is ice in the area, the waters are pretty calm.
Some 'Greenland-style' boats tend to be a bit 'submarine-like' aka 'wave piercing' in waves.
