UV resistance with varnish is two fold, one is the additive that resists the UV, the other is the reflective properties of a glossy smooth finish. If you could get a perfect finish with two coats that would be fine. Not many can do that though, so more coats are required. The film thickness shouldn't increase btw, each coat needs wet sanded so the film thickness stays about the same, the imperfections get less and less with added coats (hopefully).
