Out of sight out of mind...
No hatches with bulkheads would leave large areas of the kayak unavailable for inspection. I feel pretty confident mine would stay dry but then the builders of the Titanic didn't think it would sink.
Not sure if expansion and contraction would be a problem but I have seen rubber hatch covers look like a Jiffie Pop and damage to glass due to overheating on a really hot day with hatch covers in place.
