It's a whole lot faster to get the surface smooth with epoxy than it'll ever be with varnish, epoxy is fairly thick and varnish is very thin.

I find it hard to get a decent surface using only a squeegie, a brush works best for most people. When sanding, just take off the high spots and lightly rough up the rest or you're just throwing the epoxy away.
