Your boat looks ok to me, it does look like you need further leveling (filler) coats.

Your ridges and dips are caused by to much pressure on the squeegee. Very tricky to get it right with a squeegee.
Are you sure it's 3 fill coats or are you at 3 coats total. I do a seal coat (1) a wet out coat (2) and two fill coats (4). AND then sand fairly smooth. Then I add another fill coat (5) then sand, then maybe another coat in select areas (6).
May sound like a lot but my last 16 ft boat was only 29 lbs.
I use rollers and foam brushes, a heat gun to pop bubbles and a squeegee to level only when the epoxy is almost cured.
Your boat looks just like mine do on the first sanding, kinda :)
Be careful not to sand into glass and go ahead and apply another two coats. Sand the boat and see what you think.
