Rob-
I don't give much thought to the glue between the strips, as long as it is convenient, and dries hard so that it doesn't 'gum up' when sanding.
Generic 'yellow carpenter's glue' has worked well for me - I always test it to make sure it is still drying hard and clear. LeeValley 2002 glue works well and is a tan colour.
In the past I've used plastic resin glue (powder mixed with water- like the Weldwood glue in days of yore) and it works well but isn't very convenient.

Once the strips are soaked in epoxy and encapsulated between glass/epoxy layers, I assume they are going to 'stay put'. OTOH, I don't live in a very hot climate (BC,Canada aka PNW). Perhaps tropical sun may have an effect?
