My early boats were flat-bottomed canoes. I found them unpleasant things to paddle, and I kept modifying them to make the bottoms wider but they were slow and felt unstable. Eventually I reduced the width of the flat bottom and used bilge planks to bring the beam out to the same as before at the waterline. This reduced buoyancy and lowered the boat without reducing waterline beam, and the problem was solved. I got stable boats that were quieter in the water and easier to paddle, faster too. it's not all about beam, CoG is just as important.
