I was thinking with the A-Hawk that a small piece of ply added to the bow shaped to look like a schooner bow in profile might help with any weathercock without spoiling the looks, or perhaps a small figurehead, but don't modify it until you've paddled it in a breeze. If it is needed a retractable skeg is easily added, it's not a big deal and there are some good kits available. The A-Hawk is quite high in the bow and low in the stern: I would have expected it to windsock rather than weathercocking but I haven't tried one.

My self-designed and built canoe weathercocked like crazy, hard to paddle in a cross wind. I added a fixed skeg and now it's extra work to manoeuver in the local narrow rivers and it still weathercocks a bit. That canoe was symmetrical in plan and profile: V.2 is waiting for finish - it has a slightly raised bow and lowered stern to - hopefully - balance the side area in a cross-wind.
