Some kayaks will do that - espcially when coasting; asymmetrical boats where the paddler sits somewhat aft of midships seem the worst offenders. Although they have extra beam in the aft section to support the paddler, if they lack additional lateral area aft a slight turn generates centrifugal force that tends to increase the turn. That's the theory anyway. They usually weathercock. One boat I rented was uncontrollable; when I returned it I discovered the renter had removed the rudder or retractable skeg that came with it, to avoid damage. A rudder or skeg should fix it.
