any input you said...mine doesnt really totally answer your questions but maybe it'll be useful somewhere.
i like stretch cord...pulled tight.instead of cable. Block your pedals
so they can only slide back(aft) a couple inches from full forward.
end result is the rudder stays centered if both feet are off the pedals.
and stays centered if both pedals are pushed forward all the way.
to turn the rudder only takes lifting off one pedal a little.
there are drawbacks i guess. if you are always pushing aginst the tension of the
cord your feet might get tired after a few hours..but its not like its huge tension.
also the force of high current might overcome the tension of the cords at times and turn your rudder...i havent had that
problem yet.
