I use WEST epoxy, which is quite 'low odour'; I've used some other brands which were a bit more 'smelly'. However, none of the epoxies I've used were anything like polyester resin in terms of odour. Polyester is what most folks think of when you talk about fiberglass work - it's in Bondo , etc.

Polyester resin smell will penetrate through most homes.

Unless your wife is overly sensitive to organic vapours, and your house is very tightly sealed, I don't think epoxy work should be a big problem. I work in the attached garage (under our office/guest room) and haven't gotten any comments about epoxy smells.

If you are planning to use sizable quantities of alcohol or acetone for cleaning tools, etc. it would be best to do that out-of-doors, I think.
