Hi Alick
You could use the internal bungie method, that leaves a 'clear' deck. Likewise magnetic hold-downs. They just have a finger loop or slot for opening.
There's an internal latching system I've seen here on the forum, which I find impossible to describe.
Someone made a push-rod closing/locking system which operates from the cockpit through the bulkhead (a waterproof gasket is used). It would be similar to the old staple latches used to lock cabinet doors at the top and bottom at the same time.
