Hi Daan,
As far as I know it works by the electrical capacitance of your fingers effecting the sensing unit through the glass, electro-magnetic rather than electrical effects.
A pair of gloves dampens the effect by increased distance between finger and sensors. With the ones Bill H mentioned, the metalic strands act as a slight amplifier or carrier for the e-m of the fingers.

Kind of like the way an induction cooker works, heats a pan but won't burn you if you put your hand on the plate. Unless you're wearing finger-ring/s.
