Thor, I am 6 feet tall. I built my roll around stand at 35 inches tall (strongback resting on it). For me this put the top of the kayak forms about 40 to 42 inches tall, which worked out for me. It allow me to work easily on the sides and the top (bottom or deck) with ease. I built the stand so that I could lay down two 2x6s down each side of the kayak as a long workbench for scarfing and planing strips to fit, which saved time of walk to and from a workbench. This was about 37 inches high.
I probably could have built stand a couple of more inches higher, but I wanted to be able to see the fit of the strips from looking down. My wife bought me a mechanic seat a few years ago ( I thought at the time "What would I do with a round mechanic seat") which I used all the time when installing the side strips and cheaters strips. This was a great back saver!
