Well, Angry Birds is a safe standby, but my daughter's been playing one called Sprinkler where you have to use a fire hose to put out fires. A lot of people play Temple Run too. I've only played Temple Run Brave, and it's fine, but not that exciting to me. But you don't need cell service for any of those. I like the ESPN scoreboard app during baseball season. It's hard to keep up otherwise.
For kayaking, first of all you need a really really good dry case. Second- what kind of app do you mean? I use the NWS info and weather apps WindGuru and Weather Alerts USA as well as a GPS speedometer when I'm training. I usually don't take my phone on afternoon paddles or even day trips. It would be more useful in case of emergency on a whitewater trip, but I'd never take it because it would only be useful to make calls in dire situations, and you don't need an iPhone for that.
