I agree with Jennifer. I love the Osprey I built for my Dad and have taken the kids many times. I gives you the option to paddle single, double, or triple.
With taht said, there are a lot of good double designs out there that can be converted to a triple. Contact the designer and they'll usually be more than able to help with the conversion. Just make sure that you get good details on the revised build. I asked one designer for help with this very same kind of project and was told that the normal plans were fine to use but when the time came for details on the deck the response was more along the lines of "move the cockpits around, try a few things, and figure out what looks good." I ended up using a different designer.
I'm actually getting readyu to start a new boat as well and will definitely be building a triple.
