Hi Luke,
The usual plain weave in nylon will work fine with a recovery/retrieval type kayak. I built the blunt nosed variant with canvas skin and it conformed easily enough. Nylon should stretch easier than canvas.

Some of the problems with wrinkles comes from the concave-ness of many greenland style kayaks which doesn't apply with a recovery/retrieval style kayak.

Mind you, you can throw a fistful of salt on the above as I haven't used nylon, or polyester, as a kayak skin just canvas. :D It's easier to get my hands on.
