Yeah, I think I'd prefer wiggly to "mind of it's own". I'm toying with the idea of a slightly enlarged glue-laminated stern stem to add a little tracking, but I'll probably skip it. I suppose I can always add on some keel or skeg later if I really am craving more tracking.

I've got not problem with a little foam, I'd have been swimming in foam in my last boat though, and the cockpit was big enough to drive a mack truck through (spray skirt tended to collapse when underwater).
