I use a roller, fast way to cover big surfaces, but then tip it off with a natural bristle brush, foam brushes can work but they tend to collect too much varnish and don't leave enough on the surface.
Not sure I'd recommend using the roller without considerable practice, it's not like painting a wall, no back and forth motion, you're spreading the varnish in one direction only. Going back and forth like painting a wall just produces a silly amount of bubbles.
