If you are going to look at Kentucky Lake, you might want to consider southern Missouri (Ozarks) near Springfield. Southern MO has hundreds of paddling lakes and rivers...There is mostly flat rivers with some Class I, II and a few III. Many of the rivers are clear spring fed with nice camping on gravel bars...

White River branch
St Francis tributaries..
Table Rock Lake
Stockton Lake
Bull Shoals
Lake of Ozark
Truman Lake
