It's almost impossible to avoid the issue completely. However, wet floor at all times during application and cure definitely helps a lot. Also make sure there's no draft in your space. If the ceiling is within reach. Wipe down the ceiling with a brush or broom, too, it's amazing how much dust stays up there. With a motor boat I built I have once gone to lengths of building a little tent with a shopvac blowing in filtered air but with a kayak it will be easier to just sand and polish afterwards…
