Home Depot has 18mm Birch plywood that is probably as good as any marine plywood.
(only available in 2x4 panels, the 4x8 is different stuff) Looks like the outer layers are Gaboon.

I boiled 12 test samples (3/8" x 2") for over an hour, then soaked 'em for 2 months, water change and checked weekly.
2 pieces delaminated only several layers after 1 month. 3 more delaminated after 2 months. The rest were perfect.

Seeing as I dont boil kayaks, nor store them under water.....
