It depends on the size of the "hole" in each frame. The smaller the hole, the stronger the cross-section, and the thinner the plywood can be.

The frames you see on Tom Yost website are 0.5'' and they are probably made of average plywood, so if you use the high-quality plywood, 0.5'' should be sufficient.

Don't try to "save" weight by making the cross-sections too skinny (the hole too large), regardless of plywood used. This is especially important in the cross-section behind the cockpit (you sit and lean on it) , and in the one in front of the cockpit.
