I am just starting to skin a See Bee that I am in the process of building for my Granddaugher. I to had the same questions. After investigating the shape of the bow and stern plates the answer always comes back "what looks right". What looks right is subjective. What works to produce a kayak that handles well whether it is tracking or turning is another story. No one will, at least it's been my experince, will say use a 30 degree angle at the bow and a 45 degree angle at the stern. It seems no one will commit and say "I have build X amount of sof"s and this is what worked for me.
I used the 30 degree angle on the bow and 45 degrees on the stern, angles are from the horizontal. For what it is worth, those angles are what looked good to me. How will the boat perform I don't know. All that i can add is that from what I have read the flatter the stern, less angle, the better the tracking, the steeper the stern, more angle, the better the turning.
Look at the bright side if the angles you use do not produce the results you want it gives you an excuse to build another one.
