The biggest reason I promote using a seal coat, specially for first time builders, is it mostly eliminates the chances of dry spots in the glass on the first coat, which is pretty easy to have happen if you don't use a seal coat. The wood sucks up too much resin in spots and if you don't know what to look for, you end up with resin starved glass that has no strength.

Also, and certainly not the least, it eliminates the problems with outgassing.
