I don't sand between varnish coats. The whole point of varnish in this instance is UV protection, so I can't see the point in putting it on and then sanding it right off again.

I lay it on with a west roller, tip it off with a brush, three coats, no sanding, and I just live with any imperfections. The only instance where I would go to more trouble with the varnish job is if the boat were going into a display as a sculptural feature or some such, and was never going to be used on the water.
