Picture this, two boats, exact same design, one S&G 1/4" ply and the other cedar strip 1/4" thick. You could go paddle the ply one with no glass, you could probably carry the stripper around but I'd bet you couldn't use it without the skins. The core in a composite sandwich doesn't add alot of stiffness, but it does add some.

Yep, it's even possible to build a strip kayak out of divinicel/pvc foam which would hold its shape being carried around. :D Wouldn't like to try paddling it though.
The spacing the core makes between the skins, the shear rate of the core and the strength of the skin to core bond is what contributes most to stiffness, rather than the exact core material.
Hence, Dan's two kayaks would have very similar or identical levels of stiffness.
