There are a whole bunch of fuselage kayaks built without epoxy that are currently being used all the time. While putting epoxy on the edges of the ply will certainly extend the overall life of the kayak, it's not necessary to make a useful boat. It's not like you're going to moor your kayak in the water for a season or longer. It does dry between uses and the glue bonds work fine. I prefer Titebond II but the III will work too.
