Would Sea Tour 15 EXP (multi-chine) be a good choice for me?

I have 16' boards and would like to stay within that length. Transport and storage are also consideration.

I am pretty big guy 230 lbs 5'11
I am not very experienced kayaker, I paddled some rented boats, but never owned one.
The kayak will be used for day trips in hopefully pretty calm conditions, but wind can pick up here pretty quickly.

oh and how much poly fabric would I need to skin that boat?
