don't worry about the glass too much. It will be sufficient with one layer of 3.2oz but as others have said, a little more on the hull outside will help abrasion resistance.
I just finished my night heron and did a complete overkill with carbon, kevlar and glass. My next build will be much lighter hopefully - although the 26lbs aren't so bad for a first kayak ;-)
One thing to keep in mind is that epoxy does not add any advantages other than holding your fibers in place. Try to use as little as you can. Once your laminate has gelled use a squeegee and remove excess resin (Nick has some youtube videos on this). If you are using paint on your boat it's also a good idea to use lightweight filler instead of plain epoxy (this will make it cheaper, too).
