For low weight I think Cedar is the only option you have, all other woods will be heavier. I also selected my wood at the lumberyard, weight varies considerably between different boards. If you buy already cut strips you will have no control over this…
I did a stapleless construction throughout and I would guess that the very close fit between strips with minimal glue also helps to keep weight down. However, it makes it very time consuming, too…
And, as you said, the outfitting really pushes the weight upwards really quickly, I noted that, too. I made my own skeg system, it weighs 100g including the blade. Also, I use a Nelo Seat, which is 500g - hard to beat.
