It is interesting, it would seem to be more "green" though to just build it out of wood and eliminate the epoxy all together.
It is entirely possible to build a kayak entirely out of wood, takes more time is all, might be very slightly heavier. I'd look at lapstrake construction, then there's not even any glue used between the planks.
