As Malcolm says, kayaks aren't sailboats. My guess is that you won't be doing much tacking (upwind) anyway- most kayak sailors like to go downwind, as it's tough to keep the boat upright even on a reach.
At 17' x 32", with a large open cockpit, that boat is quite a bit different from most 'modern' double kayaks so it's a bit hard to make comparisons.

I'd stick with the plans for the BK as-designed if it were my project.
