For a temporary fix, you might try an electric glue gun and glue on a keel strip. It would be easier to make out of any type of wood. I would use a piece that's maybe 2 1/2 ft long that tapers from nothing to 2 inches where the boat curves upward at the stern.

I know exactly what you mean about the boat. I was recently on a quiet river paddle (community event) and people borrow boats etc. Paddling into the current, if some of these people were 3" off center, the boat would just turn one way or another and they don't have enough paddle skills to correct fast enough. I thought I would have to tow a few of them. Very frustrating for the paddlers.
