My experience was similar to yours as I was getting into boat building. Beware: you may never get out of boat building. :O

I am a bit larger than you are, hence, a Guillemot L as my first kayak build. I really like it, and have used it extensively for camping/paddling on several Adirondack lakes. I retrofitted a retractable skeg into it.

The only important thing you left out of your considerations of what boat to build is your shoe size. Kayaks are probably the only boat for which shoe size is an important consideration.
