I have done a couple of kayaks with Corey's Goop and I doubt that it would be possible to get a thin enough coat with a roller. Maybe it would also be likely that a roller would introduce air bubbles.

I also would have thought that by now someone would have tried a roller, in which case I would have expected to be able to find a post somewhere about how well it works.
