One problems that tends to happen in home built kayaks is people sit too far aft in the cockpit, thinking that the coaming is a back rest, which it's not. Most kayaks are designed to have the paddler sit 4" to 6" further forward, makes a huge difference in overall balance. Easy to try to see if this fixes the problem, just slide forward on the seat and see if the boat handles the way you expect it to handle, if it does, move the seat/back rest.
