that's interesting – although I wouldn't want uncured epoxy anywhere near a place I store my food in.
I use a similar process very regularly for clean layups on small parts and hatch rims, bulkhead laminates etc.: I get large, heavy sheets of waxpaper, lay one or more layers of cloth on top, pour some resin on and then add another layer of wax paper. I then use a flexible squeegee for spreading and also removing excess. This works remarkably well, laminate weights are almost as good as using vacuum. Due to the paper on top there is no tearing or moving of the cloth. Once perfectly saturated I can cut out the exact shape I need with a sharp cutter and I always leave the upper layer of paper on for better positioning.
I use quite a bit of UD carbon and this stuff is almost impossible to saturate without messing it up (=tearing out a lot of fibers) – but with the "prepreg" method it works like a treat.
