That should work in principle; the beam provides a relative line for all the stations mounted directly to it. If the boat has alot of rocker, the bow and stern forms will sit on an form that curves below the plane of the beam, so you will have to attach these end forms to the last station forward and aft or, if you are using a long beam, add an increment each station to allow the highest part of the deck to be level with the beam.
As for the midpoint, if you get the rocker right for each form, when you strip the hull the natural bend of the strips as you lay out the keel should reflect any variations between stations.

My advice....use the plans as is. Part of the fun is learning new ways to build. I built my first couple of boats using an external box beam, but tried an internal beam when I built my first Petrel. There are some excellent videos on the Guillemot site and Nick's system of using U-shaped spacers to square up the stations on the beam works like a charm.
