I want to build a very light sit on top kayak so my wife can put it on the car by herself.
As Bill said, SOTs weigh more than sit in cockpits because the seating area requires more material than an open cockpit. You could opt for thin plywood and lightweight cloth and take a few pounds off the finished product, but an open cockpit would still be lighter.
