I made a Njord a few years back, and I used the same techniques that I have for a number of other boats: External strongback, staples, 3/16 B & C strips, strips edge glued with Titebond II. I used 4 ounce S glass except for the outside of the hull where I went with a 6 ounce tight weave S glass. Total boat weight is a little under 35 pounds.
The cockpit rim is the carbon fiber raised rim as per the directions on the One Ocean kayaks site rather than Bjorn's recessed rim. I did the small ocean cockpit and I like it a lot, but I would be unable to enter the boat from a dock of any height.
Make sure you have all your forms carefully aligned as I found that with the flattish (rather than rounded) bottom and side shapes that a small irregularity can make the strips align badly, which In my case I did not notice until I was sanding for glassing. Stripping around the cockpit is a little tricky so I made a solid plywood disc the shape of the opening and stripped to that.
Have fun - it is a nifty boat and it rolls like nothing else I have paddled.
