To add to what Mike said, a double is pretty much useless unless you have two people all the time, it'll be very slow paddled alone and won't balance right alone unless the second cockpit is ballasted.
The reason you don't see many doubles that people have completed is they aren't real popular, most build two singles instead.
Also a double that will offer some challenge when you gain experience will be very difficult to start out with and one that's easy to learn with won't be much fun as you gain experience. It's worse with a double in that regard than with singles, both paddlers have to try to learn at the same rate, not real likely.
