Welcome to this Forum.The previous posts all have good comments.
I have come from a tandem background,40 years of it.I occasionally paddled a single.My wife and I are still happily married.[Start off with a tandem.]
Tandems and singles are very different in practice but they share advantages.
The tandem Kayak is an excellent way of sharing an adventure and keeping the separation concerns to a minimum.Our double is 18' by 34" and is very "seaworthy".My wife loves it.She hates bad weather,but I love it.
I suspect she has the normal concerns your wife has and also her drive for this pastime may need help from you to keep up the interest for her.Bad weather doesn't help.
I wanted more...with skills to suit.
I made us both a couple of Firestar Baidarkas.....I should have made the double version and saved allot of time and effort.I don't regret it though.
It seems to be the "togetherness" that the doubles offer which keeps my wife interested.She knows I do most of the propelling and she also knows that once I am released from the shackles of weight and beam the togetherness will need very careful management...I carry a tow line and use it at the drop of a hat when we are in the two boats.I still do most of the propelling, I guess.
Check out our system for "topping".
The tow ball post makes "topping" a breeze and can be left to one person.The extra security is also worth having in crosswinds.
